70% of the population is still dependent on subsistence agriculture with small plots of coffee trees. The coffee is from the upper Wahgi valley, with the Kuta Mill Farmers, for the first time the mill was asked to process coffee using the Honey process where the cherries have their skin removed and some of the mucilage before dying.

Blending coffee is very similar to wine blending. A certain coffee’s characteristics are utilized to provide a flavour, body or acidity element to the blend. The Papua New Guinea coffee is used to create a bright, sweet acidity to a blend. The coffee has a delightful, tropical fruit, chocolate and citrus mixture which is complex but tastes extraordinary.

Dark roast, medium to full body, and low acidity. Densely creamy body. Sweet, smooth and well-balanced. Flavor notes of ripe plum and apricot, caramelized pumpkin and rich milk chocolate. Pleasant, lingering finish.

Recipe – Papua New Guinea Honey Coffee Ham
Ingredients:
- 1 cup honey
- 1 cup apple butter
- 1/2 – 3/4 cup very strongly brewed
- 1 teaspoon freshly ground cloves
Directions:
Mix honey, apple butter and coffee. Rub ham with ground cloves. Place ham in roasting pan and pour half of coffee-honey sauce evenly over it. Reserve remaining sauce for basting and serving.
Bake on lower rack of 350 degree oven for 90 minutes or until meat thermometer reads 140 degrees. Baste with remaining sauce every 15 minutes.
Cover with foil for last 30-60 minutes to avoid excessive browning. Remove from oven and let rest in pan at room temperature for 30 minutes. Slice and transfer to serving platter.
Heat remaining sauce and serve!
